Sometimes I love to make a lunch that feels a little fancy but this dish is actually really simple to make!
The wonderful depth of flavor from the cumin and coriander add a little something extra to a plain can of chicpeas and compliment the juicy roasted Shrimp.
This is something you can whip together to take for a work lunch or even make it as a dressed up side dish…. it’s definitely a salad I think you will love!
Ingredients
I can Chic Peas / Garbanzo Beans
1 tspn ground Cumin
1 tspn ground Coriander
1/2 tspn Paprika
Salt
Pepper
Extra Virgin Olive Oil
1/2 cup chopped scallions/green onions
3/4 cup halved cherry/grape tomatoes
1/4 cup chopped fresh basil
10 medium shrimp, peeled and de-veined
METHOD:
Preheat oven to 400 degrees:
Strain a can of chic peas and then toss with olive oil, salt, pepper, and half the spices.
Lay on a baking tray and roast for 10-12mins.
Set aside.
Toss peeled shrimp with remaining spices, salt, pepper and olive oil and roast in a single layer on a baking tray for 7 mins.
Chop the roasted shrimp into smaller chunks and toss with roasted chic peas, chopped scallions, basil and cherry tomatoes.
Add some salt and pepper to taste and a drizzle of some nice Olive Oil.
Serve warm or chilled with a crisp white wine!
Yesterday I had the honor of being a witness to my best friends Bret and Yulia’s wedding service here in NYC. After the ceremony, we took advantage of the sunny summer day and found a table outside at Frank (2nd Ave, Btwn 5th & 6th St)
The sun was beaming onto our table and we ordered mimosas and beers to celebrate while we looked over the menu.
We’d all dined here before over the years and we also love Frank’s sister restaurants Lil Frankies and Supper.
Today we decided to order a few of their daily summer specials and share them between us. You can always count on the food from Frank to be fresh and delcious.

The simplicity and freshness of using high quality produce is outstanding. The flavors of the tomatoes, olive oil, fennel and kale were all wonderful and we loved trying the 3 salads as we basked/ boiled in the mid afternoon sun.
We also ordered the Sausage & Polpette Hero Sandwich baby meatballs & carmella’s slow cooked “gravy”, the daily special spinach gnocci and a Frank BLT w/ roasted plum tomatoes, country bacon, arugula & e.v. mayo.
I always sort of feel like I am at my Aunty’s place when I eat at these restaurants. It has a home cooked, comfort food feel to it and the meals are always delicious.
Our waiter was attentive and friendly and even sent out a round of celebratory champagne for the newlyweds!

Frank is open from 10:30am 7 days for breakfast, lunch and dinner.
