HomeCookin: Dinner tonight… clean out the fridge pasta w/ tuna, mozzarella, tomato and arugula.
This was purely and simply put together because after a very full weekend we just could not be bothered cooking!
So I found some tuna in olive oil, fresh mozzarella, cherry tomatoes, arugula and some gluten free penne.
Here’s how I whipped it together,
Drain two small cans tuna. Add juice of 1/2 a lime, 1/2 teaspoon red pepper flakes and a small teaspoon of dijon mustard. Stir through. Season w/ salt and pepper.
Make pasta to package directions.
*In a bowl toss arugula, halved cherry tomatoes, diced mozzarella and tuna mixture.
Make a dressing with olive oil, lime juice, a little mayo, Sriracha and mustard. Make to your taste… (I made mine a little spicy and thin enough to pour)
Drain pasta and toss through the *salad* and dressing.
Serve immediately and enjoy!
This was so simple and really ended up being a delicious dinner!
