The Aussie Who Ate The Big Apple
A @kitpeterson selection tonight on the menu: Orecchiette, caramelized onion, garlic, italian sausage, broccoli rabe, red pepper + Parmesan. 🍷🍴 Nicely played KP. Nice-ly-played. Here’s HOW to make it; 
Boil water, salt and add Orecchiette to cook until just al dente. While pasta is boiling/cooking start the sauce
 In a wide saute pan, add two chopped cloves of garlic and a slug of olive oil, saute until fragrant. A half a large onion sliced into half rings and brown this until it starts to caramelize. Stir through about a lb of spicy Italian sausage meat (pork with spices like paprika, rep pepper, parsley and salt and pepper) and break up until browned. Add a large handful of chopped broccoli rabe and stir through. Season with salt, pepper, red pepper flakes (if you want more heat) and a swig of chicken or veggie stock. Simmer on med/low heat for a few mins. 
Drain the pasta and add to the saute pan with the sauce. As I added the pasta, I added a small drizzle of EVOO to get the pasta sticking to the sauce. Toss through over low heat. Serve with grated parmesan and/or pecorino!

Amazing Italian Fine Dining At Vetro By Russo’s On The Bay

A little while ago I was invited to an incredible night of Italian fine dining at Vetro - By Russo’s on the Bay. This Howard Beach restaurant was hit hard by Hurricane Sandy and after many renovations, they wanted to celebrate with a very special Dine-Around Dinner that showcased all of their unique spaces to eat and drink. 

Chef Michael DeGeorgio is world renowned and had specially created the night’s menu to feature the kind of authentic Italian cuisine that Vetro’s is famous for. By famous, we mean their 5 Star diamond awards and being voted #1 restaurant in the tri-state area by Open Table.

I was also excited because two of my fabulous Broadway friends, Amanda and Beth were there too. We all danced together on Broadway and they now have an amazing dessert blog Just Desserts NYC. We were thrilled to experience all the fun together! 

To start, everyone arrived in the Blue Room for a signature cocktail and then we moved down into the amazing cellar for antipasto, appetizers and a tasting of three wines. 

The antipasto was delicious with various meats, cheeses and olives. For appetizers, my favorite by far was the chicken meatball - I think I literally ate about 4 of them. I could tell that dinner was going to be amazing already. 


Next we moved into their dining room that overlooked the bay. The menu was extensive and features what Vetro’s is known for when they cater special events and weddings - a choice of 10 different entrees. Now that’s impressive.

We started with homemade pasta and then moved onto mains. I chose the Osso Buco. 

Amanda, Beth and I were pretty happy with ourselves - we dubbed our trio the clean plate club. Haha! 

To finish the night, we moved upstairs into their VIP rooftop terrace for dessert. Their Executive Pastry Chef, Marco Valencia had put on quite the show. Incredible handmade cookies, tarts, canolis, cakes and macarons. It was all delicious and even after eating multiple courses throughout the night, we still kept some room for dessert. 

My favorites of all the desserts were the canolis. Amazing crunchy and cracking shell with a rich cream filling. 



Vetro’s were so welcoming and really treated us all like kings and queens. It’s easy to see why their team is so loyal to the company and family style service they are so well know for. 

Thank you to Mr Russo and the entire team of staff who looked after us that night. It was an absolute pleasure!
