Home Cookin’ -Spaghetti + Shrimp w/ Roasted Tomato Cream Sauce
Last night we made a fantastic dinner for friends that went down as one of the most delicious ever!
The idea of a pasta with shrimp spawned into buying fresh spaghetti from EATALY and making a roasted tomato and garlic cream sauce to toss through with the pasta and shrimp. We also made a fennel + avocado salad which was delicious as well.
Here is the surprisingly simple recipe below:
Spaghetti w/ roasted shrimp, tomato garlic cream sauce
In a 400F oven, roast two small containers of grape or cherry tomatoes, 5 cloves of unpeeled garlic and 2 sliced spanish onions for 20 mins.
( toss with olive oil , salt and pepper before roasting )
Set aside 1/4 of the tomatoes + all the onion for the sauce.
When cool enough peel the garlic and roughly chop. Add the remaining roasted tomatoes and garlic to a blender or food processor. Add a little lemon juice + zest, salt and pepper and then blend until smooth.
Peel and de-vein about a pound of medium shrimp. Toss with some olive oil, S+P then lay on a tray and roast in the oven (400F ) for 7 mins. Thank you Ina Garten for this NEVER FAIL shrimp recipe. 
In a sauce pan, saute a clove of finely diced garlic, a diced plum tomato in some olive oil. Add the reserved roasted tomatoes, and red onion.
Add the tomato/ garlic puree and heat through a small carton of heavy cream. Stir through a cup of shredded fresh basil and a half cup of grated Parmigiano-Reggiano cheese.
Season with salt and pepper to taste.
Boil your favorite fresh long strand pasta as per directions and then gently toss through with the sauce.
Serve with the Shrimp and basil and Parmigiano-Reggiano on top!
Fennel Avocado Salad
Finely shred /chop the fennel and then toss with olive oil, salt and pepper + lemon juice. Let sit for about 20 mins.
Toss through with mixed greens, chopped avocado, cucumber and Parmigiano-Reggiano. Add a little more olive oil and lemon juice if needed.
Serve alongside the pasta! 
This will definitely be a new favorite to cook for friends! Delicious!
