After a workout, sometimes a girl just needs a delicious, pan seared med-rare steak w / tzaziki + green bean, tomato and cucumber salad. [Marinate] the skirt steak in salt, pepper, olive oil, dried oregano and a clove of crushed garlic. 
[Mix] a small tub of Greek yogurt with a squeeze of lemon juice, salt, pepper, a clove of crushed garlic and 1/2 cup finely chopped cucumber to make a Tzatziki
[Toss] lightly blanched haricot vert with chopped roma tomatoes, cucumber, roasted beets and chopped mixed olives. Drizzle a little olive oil and season with salt and pepper.
[Sear] the steak in a hot pan with a drizzle of olive oil. I cooked mine about 4 mins a side and then rested for 2-3 minutes before slicing. ENJOY!
