Well, here goes another recipe using the left over slow cooker pork! I really want to change up the flavor and create something new with the pork. I first started with a broth… Pour two cartons of chicken broth into a pot with garlic, ginger, some chopped fennel, fresh chilies and a swig of soy sauce. Bring to the boil and then simmer for 20 mins. Chop the pork into smaller pieces and mix in a bowl with some sesame oil, soy sauce and fish sauce. Mix and mash through to break up the meat. Use packaged wonton wrappers and make dumplings with the pork mixture. Make chow mien noodles to package directions and then drain and set aside. In a steamer above the stock, steam fresh greens until just tender. (I used broccoli and asparagus but would usually use bok choy) Bring stock to a medium simmer and in batches boil the dumplings until cooked. Reserve on a plate. In a bowl serve noodles, dumplings, green veggies and then ladle hot broth over the top. Garnish with cilantro, scallions, chili oil and fresh chilies. So delicious!
