[HomeCookin’] NYC anniversary dinner w/ my love. Kale |sweet potato| goat cheese | shiitake | pan fried egg.
[Roast] Cubes of sweet potato, tossed with olive oil, salt, pepper, red pepper flakes & lemon zest in a 375F oven for 15 mins - until fork tender.
[Chop] Green kale, cherry tomatoes, radicchio and toss in big bowl. Season with salt, pepper & a swirl of olive oil.
[Saute] Sliced shitake mushrooms until browned. Set aside. Heat 2 tbsp of olive oil and fry eggs sunny side up. Spooning hot oil over the yolk to set it.
[Whisk] lemon juice, clove of finely crushed garlic & olive oil into a dressing.
[Serve] Pile on kale salad, top with goat cheese, mushrooms, sweet potato. Drizzle dressing over the top and then finish with a fried egg.
