HomeCookin: GF tagliatelle w/ burst cherry tomatoes, mushrooms & garlic chicken.

Cut one large chicken breast into bite size pieces and mix with one clove crushed garlic, 1 tbsp olive oil, salt, pepper, 1 tsp Dijon mustard and the zest of a lemon in a bowl. 

Saute for a few mins in a saucepan until browned and just cooked through.
Remove and set aside. 

Boil and cook pasta to package directions. (We used Shar tagliatelle and cooked it for 6 mins before adding to the sauce- check often as GF pasta tends to get overcooked quickly)

In the same sauce pan, saute 1 large chopped onion with 1 clove garlic until soft. Add 1 cup chopped brown mushrooms. Saute on med-high heat until caramelized. Add 1 punnet of halved cherry tomatoes and stir through. 
Add salt, pepper and a little lemon juice. 
Add the chicken back to the pan and stir through. Add the juice of one lemon, a handful of chopped basil and 1-2 tablespoons of butter to thicken sauce. 

Add the drained pasta straight to the pan and toss through with chicken & vegetables. 
Finish with some grated Parmesan cheese and more thinly chopped basil.
