HomeCookin: Taco night!!!! Grilled fish tacos w/ cilantro crema, cabbage slaw and guacamole.
1/2 pound white fleshed fish (cod, fluke, tilapia)
2 plum tomatoes
2 limes
1 cup purple cabbage
1 avocado
2 cloves garlic
hot sauce
bunch cilantro
sour cream
corn tortillas
COOK:
I used a little over a 1/2 pound piece of Fluke from Whole Foods. ($5.60)
Cut into bite size pieces and marinate in lime zest, garlic, lime juice, a handful of chopped cilantro and olive oil.
*Chop avocado & mix with 1/2 diced plum tomato, a pinch of red pepper flakes, a small diced clove of garlic and lime juice. Season with salt and pepper.
*Chop 1.5 plum tomatoes + mix with 1 cup chopped purple cabbage. Season with lime juice, salt and pepper.
*In a food processor blend 1/2 cup sour cream, 1 cup loosely packed cilantro, 1 tbsp hot sauce, squeeze of lime juice and a pinch of salt.
In a saute pan, saute a half of a sliced onion until browned. Set aside.
Add some olive oil and pan fry the fish until browned on each side. Add the onions and warm through.
Serve fish with warmed corn tortillas, crema, guac and cabbage.
